Doshic Considerations My Mauritian Curry Powder recipe is Tridoshic so balancing to all dosha.

Ayurvedic Curry Powder

Ingredients:

500g coriander

50g cumin

15g pepper

10g fennel seeds

5g cloves

7g cinnamon

25g cardamom

100g turmeric 1 tbsp turmeric powder to color

“When you create a masala you are building the cosmic pillars for primal nourishment through food, breath, and sound. You are honing the vibration of the mind and resuscitating the spirit, bringing them into a state of heightened awareness. The nose becomes a direct route to consciousness; the eyes, the gateway to light; the ears, a pathway to peace. The tongue receives the blessings of flavors, and the sense of touch leads the way to reforming your experience. ” — Maya Tiwari in "Living Ahimsa Diet"

Directions: 1. Dry roast each spice individually pan until fragrant, let cool. 2. Crush seeds in a mortar and pestle or in a spice grinder to get best results. 3. Add Tumeric for color and mix well. 4. Store in a glass jar.

How to Keep Spices Fresh Longer

  1. Keep at or around a consistent 70℉ temperature.

  2. Place spices away from direct sunlight and heat.

  3. Transfer to tightly sealed, non-porous containers that are ideally all the same size (for easy storage)—baby food jars, glass containers, ceramic jars, or metal tins all work.

  4. Spices dont go bad but they will lose their potency and taste.
