Bouillon Crab: A Little Messy, A Lot of Magic


Bouillon Crab is a hot, spicy Mauritian soul-warmer made with succulent crabmeat, onion, garlic, chili, and thyme, all simmered in a fragrant tomato broth. In Mauritius—my parents’ homeland—it’s usually served in oversized Chinese-style bowls and slurped with pure enthusiasm. "Bouillon" just means broth, and I’m certain every Mauritian has their own version.


This has always been my absolute favorite dish. It’s a sexy soup—playful, messy, and deeply flavorful, one I would often enjoy on the Grand Baie coast on the tropical island of Mauritius, where I spent many summers. It is the ultimate date-night dish if you don’t mind getting your hands a little dirty and getting truly involved with your food. After all Food is Medicine! But beyond the romance, it’s a powerhouse of healing.


Its a recipe I share with my clients that work in in high-pressure corporate environments, this isn't just a meal—it’s a recovery protocol. When you’re managing teams and tight deadlines, your nervous system needs grounding, and your brain needs the Omega-3s and B12 found in this succulent broth to stay sharp." This recipe slows down the mind so you have to take your time and enjoy this ritual or doing some self care, but its you don't have to spend hours at the stove.

I’ll admit it: I am a self-confessed spice junkie. I live for the capsaicin kick from Thai hot green chilies. There’s nothing like that flush that hits your cheeks when the heat kicks in! Think of it as a "mini facial"—that intense heat improves blood circulation and gives you a natural glow. If you’re a fellow spice lover and like things a bit hotter, don’t be shy with the chilies. Lean into the sweat! I even make my own chili sauce.


This soup is a therapeutic, warming hug for your immune system—easily digestible and perfect for when you want something spicy, exotic or want to clear out congestion and ground your energy during the colder months. There’s a famous scene in the 1999 version of The Thomas Crown Affair where Pierce Brosnan and Rene Russo are perched oceanside on a private Caribbean island, passionately sucking crab legs by the fire. In my head? They’re eating Bouillon Crab.

It’s meant to be an experience. But hey, if you prefer to keep things a bit neater (or you're short on time), you can absolutely use canned crab—no shells, no cracking, no problem. You'll still get all that incredible flavor and healing power.
