Give yourself a date night—even if it’s just with yourself.


Bouillon Crab is a hot, spicy Mauritian soul-warmer. It is a vibrant, fragrant tomato broth simmered with succulent crab meat, onion, garlic, chili, and fresh thyme. In Mauritius—my parents’ homeland—it is usually served in large Chinese-style bowls and slurped with pure enthusiasm. "Bouillon" simply means broth, and I’m certain every Mauritian family has their own cherished version.


A Ritual of Connection


This has always been my absolute favorite dish. It’s a "sexy" soup—playful, messy, and deeply flavorful. It takes me back to the Grand Baie coast on the tropical island of Mauritius, where I spent many summers.


Because food is medicine, this is the ultimate date-night dish—provided you don’t mind getting your hands a little dirty and getting truly involved with your food. I often share this recipe during my corporate team-building workshops; it makes a large, communal pot perfect for bonding over a steaming bowl. There is nothing like the shared laughter of cracking into crab to break the ice and build authentic connections.



The Professional Reset

A Little Messy, A Lot of Magic


There’s a famous scene in the 1999 version of The Thomas Crown Affair where Rene Russo and Pierce Brosnan are perched Oceanside on a private Caribbean island, passionately eating crab by the fire. In my head? They’re eating Bouillon Crab.


It is meant to be a sensory, "hands-on" experience. However, if you prefer to keep things a bit neater (or you’re short on time), you can use high-quality canned crab meat. You’ll still get all that incredible flavor and healing power without the cracking. A Note on the "Piment" (Spice)


"Piment" translates to chili pepper in French. This soup is meant to be spicy, and as a self-confessed spice junkie, I live for the capsaicin kick of Thai hot green chilies.


There’s nothing like the flush that hits your cheeks when the heat kicks in! I like to think of it as a "mini facial"—that intense heat improves circulation and gives the face a natural, healthy glow. If you’re a fellow spice lover, don’t be shy with the chilies.
